Mouthfeel Is Having a Moment: Why Texture May Be Food’s Next Great Battleground
I used to think flavor was the undisputed ruler of food. Sweetness, salt, acidity, bitterness, spice—those were the forces that made us reach for another bite or quietly push a plate away. Texture mattered, of course, but I treated it as a supporting player. It was the scenery behind the main performance.
I do not see it that way anymore.
The more closely I watch what is happening in grocery aisles, coffee shops, candy displays, restaurant kitchens and social-media feeds, the more convinced I become that texture has moved to center stage. Consumers are not simply asking whether something tastes good. They want it to crunch, stretch, snap, fizz, melt, pop, foam or ooze. They want a physical event, not merely a flavor.
That shift is turning “mouthfeel,” once a term heard mostly in sensory labs and professional tasting rooms, into one of the food industry’s most important areas of competition. The Associated Press recently highlighted how companies are building new products around texture, from air-whipped espresso and wafer-like protein bars to candies that combine chewiness, crunch and fizz. I see the trend as more than another novelty cycle. It reflects a deeper change in what people expect food to do for them.
We increasingly want food to hold our attention.
I Was Already Choosing Texture Without Realizing It
When I think about the foods I crave, I notice that my own vocabulary often describes sensation rather than taste. I want fries that are crisp, yogurt that is creamy, bread with a crackling crust and a tender center. I want a cookie with resistance at the edge and softness in the middle. I want pizza that bends without turning limp.
None of those words tells you whether the food is sweet, salty or savory. They describe structure, moisture, sound and movement. They describe what happens between the first bite and the swallow.
That is why mouthfeel can be difficult to separate from flavor in ordinary conversation. We experience food as a whole. Aroma, temperature, sound, appearance, taste and physical sensation arrive almost at once, and the brain merges them into a single judgment: satisfying or disappointing. A drink’s carbonation can sharpen its apparent brightness. Fat can make a sauce feel luxurious while carrying flavor compounds across the palate. A crisp coating can make hot food seem fresher. Once I began looking at food through that lens, familiar choices made more sense. Why do potato chips lose so much of their appeal after the bag has been left open? Why does a fresh baguette feel more flavorful than a stale slice made from nearly identical ingredients? Texture is carrying far more of the experience than we usually credit.
The New Products Are Designed as Sensory Experiences
Food companies have clearly noticed. Starbucks has introduced the Aerocano, an iced espresso beverage whose identity depends on an airy, whipped body. PowerCrunch differentiates its protein bars with a layered wafer structure instead of the dense chew associated with many protein products. Ferrara’s Trolli Gummi Popz combine a soft, chewy exterior with a fizzy filling.
These products do not treat texture as an accidental result of manufacturing. Texture is the proposition.
The same logic is visible across categories. Coffee chains promote cold foams, popping pearls and blended drinks with suspended pieces. Candy makers layer shells, gummies, liquid centers and crackling elements. Bakers combine established formats to create hybrids with contrasting structures. The crookie, for example, places cookie dough inside a croissant, giving consumers crisp flakes, buttery layers and a softer melted center in one item.
Even products positioned around nutrition are leaning into texture. A protein bar can contain an impressive amount of protein and still fail if eating it feels like work. A high-fiber snack may look virtuous on the front of the package, but consumers are unlikely to buy it repeatedly if it is dry, gritty or tough. In those categories, a lighter wafer, smoother filling or cleaner bite can turn a product from an obligation into a treat.
That distinction matters. The food business does not thrive on first purchases alone. Trial may come from curiosity, advertising or a health claim. Habit comes from pleasure. Texture is increasingly the bridge between functional benefits and repeatable enjoyment.
This Is a Global Story, Not a Passing American Craze
It would be easy to interpret the current wave as a social-media-driven fixation created by candy brands and coffee chains. I think that explanation is too narrow. People have valued distinctive textures for centuries, and many food traditions developed specialized techniques precisely to produce them.
Japanese mochi is prized for its elastic chew. Traditional Turkish ice cream is known for stretch and resistance. Tapioca pearls transformed tea drinking by adding something to bite. Crisp tempura batter, the blistered edge of a dumpling, the brittle sugar crust on crème brûlée and the spring of a well-made noodle all prove that texture has long carried cultural meaning.
What has changed is the speed at which these sensations travel.
A regional texture can now become a global reference point in months. Short videos need no translation to communicate the crack of a shell, the pull of melted cheese or the wobble of a custard. Viewers may not know the ingredients, but they understand the sensory promise. Sound matters too. The amplified crunches, snaps and slurps common in food videos give audiences a partial experience before they ever taste the product.
This creates an unusually fertile environment for cross-cultural experimentation. The AP report points to stretchy yogurt gaining attention in China, crunchy-coated marshmallow-centered candy from Sweden, and layered pastry inventions in Paris. Each reflects a local market, yet all participate in the same wider desire for food that performs physically.
I find that important because it shows that the texture trend is not tied to one flavor profile. Flavors can be geographically specific and culturally learned. A texture such as crispness or creaminess can often communicate more immediately. That gives companies a sensory language they can adapt across borders, even when sweetness levels, spices and familiar ingredients must change.
Why an Overstimulated Consumer Wants More Stimulation
At first, the trend seems paradoxical. We live with constant alerts, rapid videos, crowded screens and endless choice. Should food not become a refuge from all that stimulation?
Sometimes it does. Soft soups, smooth mashed potatoes and familiar noodles still provide comfort precisely because they demand so little. But much of modern eating happens while attention is divided. We snack while scrolling, answer messages over lunch and eat dinner in front of a television. In that environment, flavor alone can fade into the background.
Texture pulls us back.
A sudden pop, crunch or change in consistency interrupts automatic eating. It gives the brain new information. Ferrara consumer-insights executive Shannon Weiner told the AP that textural contrast can break through mindless activity and create sensory engagement. I think that observation gets to the heart of the trend. Texture is not simply more stimulation. It is stimulation that restores awareness of the food itself.
Consider a uniform snack and a layered one. The uniform snack delivers roughly the same sensation from beginning to end. The layered version changes as we chew: a hard shell fractures, a softer center compresses, perhaps a filling emerges. That progression creates small moments of discovery. We pay attention because the next second is not identical to the last.
There is a commercial consequence. The more attention a product commands, the more memorable it may become. Consumers may struggle to describe a subtle flavor distinction between two similar snacks, but they can remember “the one with the crunchy shell and juicy center.” Texture gives the product an identity that can be felt, explained and shared.
The Pandemic May Have Changed How We Notice Food
The COVID-19 pandemic also appears to have accelerated interest in texture. Loss of smell and taste made millions of people newly aware that eating depends on more than those senses. When familiar flavors disappeared or weakened, temperature, irritation, pressure and consistency remained available as sources of experience.
Ferrara introduced Nerds Gummy Clusters in 2020, pairing a chewy center with tiny crunchy candies. The product became a major success and helped establish a template for more complex candy. Since then, the category has welcomed products such as freeze-dried candy, gummies with liquid centers and pieces that combine chewiness with fizz.
I would be cautious about crediting one historical event for an entire industry shift. The popularity of texture predates the pandemic, and social media, global food exchange and ingredient technology were already moving in the same direction. Still, the pandemic may have taught consumers an involuntary sensory lesson. Taste and smell could no longer be taken for granted. Mouthfeel became easier to notice because other parts of the experience had gone quiet.
That awareness did not necessarily disappear when people recovered. Once I learn to notice an element of experience, I rarely return completely to my earlier blindness. The consumer who became attentive to crispness, temperature or chew during a period of altered taste may continue to value those properties afterward.
Delivery Has Turned Texture Into an Engineering Problem
The growth of food delivery makes this trend more consequential—and much harder.
A dish served immediately has one texture. The same dish sealed in a container for 30 minutes has another. Steam softens breading. Sauces migrate into crusts. Fries lose their brittle exterior. Ice melts, foam collapses and hot ingredients continue cooking. Distance becomes an ingredient, usually an unwelcome one.
Before delivery became so central to restaurant economics, a chef could optimize a meal for the short trip from kitchen to table. Now many companies must design food for a journey through time, temperature changes, vibration and trapped moisture. The customer does not grade the meal based on how it left the restaurant. The customer grades what arrives.
Ingredion executive Patrick Kalotis told the AP that the company has developed potato-starch coatings intended to keep fries crisp for 30 minutes and is working to extend that performance to 45 minutes. That example captures the new competitive reality. A coating that preserves crunch is not a minor technical improvement. It can protect a restaurant’s reputation across an entire delivery channel.
Packaging designers are part of the challenge too. Ventilation may release steam but sacrifice heat. A sealed container holds temperature but encourages condensation. Separating sauces can preserve a crust but add inconvenience. Every choice involves a tradeoff, and texture is often where the customer feels the outcome.
I expect more menu items to be designed backward from the delivery experience. Instead of asking how to transport an existing dish, companies will ask which structures survive transportation naturally. Sauces may be applied at home. Components may be separated. Breading systems may become more sophisticated. Recipes may account for carryover cooking and moisture migration from the beginning.
The winning delivery meal will not merely arrive intact. It will finish becoming itself at the moment the customer opens the package.
Healthier Food Still Has to Feel Like the Food We Know
Texture becomes even more important when companies reformulate products for health, cost or sustainability. Remove sugar, fat, salt or a familiar protein, and the change does not affect taste alone. It can alter viscosity, moisture, browning, aeration, stability and the way a product breaks down in the mouth.
Sugar, for example, does far more than sweeten. It influences freezing, bulk, tenderness and water activity. Fat carries flavor, creates lubrication and affects structure. Gluten contributes elasticity. Eggs emulsify and set. Replacing any of them can produce a nutritional improvement on paper while creating a sensory disappointment in practice.
This is where ingredient science becomes invisible but essential. Starches, fibers, hydrocolloids, proteins and emulsifiers can help restore creaminess, suspension, body or crispness. Ingredion, for example, develops systems intended to keep reduced-sugar yogurt creamy. The technical challenge is not simply to make a “better-for-you” product. It is to preserve the cues that tell a consumer, “Yes, this is still yogurt.”
I believe consumers are often less resistant to healthier food than they are to sacrifice. People may accept a small flavor difference if the product remains pleasurable, but an unexpectedly gritty drink or rubbery snack can make the health claim feel like punishment. Mouthfeel is where compromise becomes tangible.
The same issue shadows plant-based foods. A meat alternative may use convincing seasoning, yet fail if it lacks juiciness or the right resistance. Dairy-free cheese can reproduce salt and tang but disappoint if it does not melt, stretch or coat the palate as expected. Texture is tied to category recognition. When it is wrong, the product can feel like an imitation even if the flavor is close.
For companies, that makes texture a strategic tool. Better mouthfeel can broaden the audience for foods built around reduced sugar, increased protein, added fiber or alternative ingredients. It may be the difference between a worthy experiment and a durable habit.
Packaging Has Not Caught Up With What Consumers Want
One of the most striking details in the AP report is Mintel’s finding that 59% of packaged foods introduced in the United States this year carried no textural claim on the label, even as consumers searched for novel physical qualities.
That looks like a missed opportunity.
Food packaging is full of flavor promises: smoky, tangy, extra hot, vanilla, berry, sea salt. Texture words appear too, but often as generic adjectives placed almost automatically near the product name. If mouthfeel truly shapes purchasing decisions, brands will need a more precise vocabulary.
“Crunchy” is a start, but it does not tell the whole story. Is the crunch thin and brittle or dense and hard? Does it give way to creaminess? Is the product airy, flaky, chewy, juicy, silky, whipped or crisp? These descriptions help consumers imagine an experience before opening the package.
Visual design can do some of the work. A cutaway image can reveal layers. Transparent windows can show coatings or inclusions. Close-up photography can emphasize bubbles, flakes or a glossy center. For online shopping, short video may become especially valuable because shoppers cannot squeeze, smell or sample the product.
Brands should be accurate, however. Few disappointments are as immediate as a package promising crunch that delivers staleness. Texture claims create expectations that manufacturing, shelf-life systems and distribution must consistently meet. A flavor variation may be forgiven. A structural failure often reads as poor quality.
Where I Think the Food Industry Goes Next
I expect the race for texture to intensify, but not in a single direction. Some products will become more elaborate, with three or four distinct layers and sensations. Others will pursue extreme simplicity—a perfectly smooth drink, an exceptionally light chip or a sauce with an unusually clean finish. Both can stand out if they deliver a clear sensory identity.
I also expect texture to become more personalized. Restaurants and beverage chains already let customers add foam, pearls, jellies, crunch toppings and inclusions. That modular approach could spread because it allows one base product to satisfy different preferences. One customer wants smooth and soothing; another wants constant contrast.
Delivery performance will become a more visible selling point. Restaurants may eventually advertise that an item stays crisp for a defined period, just as packaged products promote resealable freshness. Packaging and recipes will be developed together instead of in separate departments.
Health-focused brands will invest more heavily in sensory science. The era when consumers were expected to tolerate poor texture in exchange for protein or reduced sugar is fading. As competition increases, functional products will need to feel as pleasurable as conventional ones.
Finally, I expect clearer texture language on menus and packages. Words that were once confined to culinary writing—velvety, aerated, yielding, laminated, brittle—may become more common in mass-market communication. Not every term will survive, and some will inevitably be overused. Still, consumers will become more fluent in explaining why a product satisfies them.
Flavor Is Not Losing—Our Definition of Flavor Is Expanding
I do not think texture will replace flavor. That framing creates a contest where none is needed. Instead, the industry is recognizing that flavor was never an isolated signal. It was always intertwined with aroma, temperature, sound and physical sensation.
What we casually call “taste” is an orchestrated experience.
The renewed focus on mouthfeel gives food companies another way to create pleasure, solve practical problems and make products memorable. It can help fries survive delivery, make reduced-sugar yogurt feel familiar, turn a protein bar into a treat and give a piece of candy a story that unfolds in the mouth. It can also make food safer and more enjoyable for people whose needs have too often been ignored.
For me, the most revealing part of this trend is how obvious it feels once I notice it. I have always cared whether a chip cracks, a sauce coats, a noodle springs back or a pastry shatters into flakes. I simply filed those sensations under taste because I lacked a better habit of attention.
Now the food industry is teaching consumers to notice what was there all along.
The next time I crave a particular snack, I plan to ask myself a more precise question. Do I really want its seasoning, or do I want the sound of the first bite? Do I want sweetness, or the contrast between a thin shell and a soft center? Do I want coffee, or the cool density of foam against espresso?
The answer will probably be all of it. That is exactly the point. Great food does not arrive one sense at a time. It crackles, stretches, melts and releases flavor in a sequence. Mouthfeel is not the new flavor. It is the part of flavor we are finally learning to name.
